Ingredients for Macaroni Salad
•2 cups uncooked elbow macaroni •3 large hard-cooked eggs, chopped •Green onion, chopped •3 stalks celery, chopped •1 small red, yellow or green bell pepper, seeded and chopped •dill pickles chopped •Mayonnaise to taste •yellow mustard to taste •Salt and pepper to taste •Herbs of your choice, I use thyme, celery seed, dill weed, and parsley.
1.Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and set aside to cool.
2.Combine eggs, onion, celery, bell pepper, and pickles in a large bowl. Stir together mayonnaise, mustard, herbs, salt and pepper in with vegetables. Top with cooled macaroni; stir until well combined. Cover and chill in the refrigerator for at least 1 hour before serving.
You can substitute other vegetables to your liking… artichoke hearts, mushrooms, olives or even add black beans. If you want some zing add a small amount of red wine vinegar to your taste.
