Hello again guys! I thought I might bring you my Grandmothers old style breakfast she fed me when I was just a button. It was Biscuits smeared with Frostyback and Fried Fatback. Now I think some of you know just what I am speaking of. However some of you Peckerwoods do not so just for you, I give this country history lesson. Fatback is simply Salt Pork. You can pick up a package in your supermarket and it may come sliced or just a whole square. Try to pick the sliced package. Frostyback is either Sorghum or Molasses, usually a tablespoon or more mixed with a good pat of butter. I know, I hear you "PW's" refer to "Sorghum Molasses" all the time but they are two different things. Sorghum is made from a grain type plant and Molasses is from sugar cane. As a very young little snit, I got to watch BOTH being made.
Now to make this breakfast, open your package of sliced salt pork and cut away the skin on the edge of each slice. Place all pieces of the meat in a sauce pan and boil until the slices appear thicker and flatten out. Remove them and let them rest a few minutes. Dredge each piece well in flour seasoned to your taste and fry in some good Pig Fat until they are golden brown and crispy. Now I am sure you have someone available that is a good hand at Biscuits so all that is needed is the hot biscuits, some butter and either your Sorghum or Molasses. If this has all been done right, the frostyback, fried fatback and hot biscuit will all but melt in your craw when you shove it in. I warn you, Frostyback is kinda like eating peanuts. It is a really hard habit to break once you start. Oh yes, remember those thin strips of skin you cut of all the slices? Save em and throw em in the bottom of the pot when you cook your green beans. You will be glad you did. I like this breakfast on cold winter mornings but it is Laraping good anytime. Some may say this sort of cooking is not good for you but my Grandmother along with uncles and aunts all lived into their 90's and ate this food. All but Great Uncle Spence, he fooled around and stepped out in front of the city bus at 41. He always did take shortcuts. Try the breakfast boys, yer gonna love it!!!!!
