Something I do before starting building a model is take a sharpie and mark the sprue letter or number in a easy to see color so when I am looking for a certain part it is easier to find... mark both sides in case you set it down the wro ng way you can still see it... here is an example:

Some kits have tons of sprues so it helps me immensely in finding what I need quickly!!!

One armor kit I built not only had sprues A thru K (except "I"), but also had AA and CC sprues (vinyl and clear parts) and an M "sprue" that was actually the photo etch.
Anything to keep it all straight is a great idea!

Trumpeter kits always have tons and duplicates is some for multiple parts!!! The Aerosan I'm working on has two each of b & c sprues...

I think its Tiger Model who include a set of sticky flags with letters on to identify the sprues, very handy.
