Here is my easy go to soup when it starts to get chilly outside. Actually, I eat it year round. Ingredients: 2 chicken breasts 1 48 ounce lower sodium chicken broth 2 red potatoes, skin on, diced 3 stalks of celery with leaves attached, diced 3 medium carrots, diced 1 large sweet onion, diced 3 cloves of garlic, peeled and diced Bunch of cilantro, coarsely chopped 6 scallions, sliced 1 Knorr Chicken bouillon cube 1 15.8 oz can of Great Northern beans 1 Tbls. butter 1 Tbls. olive oil pepper, dried thyme and rosemary 1 cup of warm water with tbls. of flour dissolved Directions: Add oil and butter to pot over medium heat. Cover chicken breasts with pepper, and dried thyme and rosemary. Add to pot and brown both sides. Add garlic, celery, carrots, scallions, and onions. Stir vegetables for 5 minutes, and add potatoes and half of cilantro. Add chicken broth, water with flour, and chicken boilloun cube. Add can of beans and liquid. Cover and bring to a low boil, stirring occasionally, then turn down heat and simmer for hour and a half. Pull chicken breasts out, shred, and place back into pot. Serve with noodles/rice of your choice and garnish with cilantro.
