Decided to try my hand at some homemade enchiladas.. so Laura gets to be my guinea pig to see if it is edible! LOL! So here is what I used: Pork Sirloin Chops… I BBQ’ed these with a light sprinkling of seasoning salt over low heat till lightly cooked (pink inside and tender) and then chopped into bite size pieces and then drizzled lime juice over them! In the meantime cook refried beans over low heat with 8oz of Sour Cream, Cilantro and Dill Weed sprinkled to taste, a minced clove of Garlic and a 4 oz can of green chili peppers… sprinkle with shredded cheddar cheese to your liking… Pour half a can of enchilada sauce in the bottom of your baking dish and warm your corn tortillas in the microwave or oven so they will roll… fill with a spoon full of the bean mixture and some of the pork and roll up placing them in the dish on the sauce… Cover with the rest of the sauce and shredded cheddar cheese and bake for 30 minutes in the oven set on 350 degrees… Serve with a side of salad and fruit and enjoy! I thought the flavor was fantastic and Laura went back for seconds, the ultimate compliment!!! Until next time enjoy your week, Joe
