Decided I would treat Red to some special baked bread to go with her Polish Potato Salad I am making her tonight for dinner and decided I would share the results and recipe with you!!! This is so easy to make and no matter how many times I have made it, it always turns out wonderful!!! I doubled the batch for two loaves!!! Yummy goodness indeed!!! English Muffin Bread 2-1/2 to 3 c. flour 1 pkg. active dry yeast ¾ t. salt 1 T. sugar Cornmeal In large mixer bowl combine 1 c. flour and the yeast. In saucepan heat 1-1/4 c. water, sugar, and ¾ t. salt till warm (115º-120º), stirring to dissolve sugar. Add to dry mixture in bowl. Beat at low speed with electric mixer for ½ min., scraping bowl. Beat 3 min. at high speed. By hand, stir in enough remaining flour to make a soft dough. Shape into ball. Place in lightly greased bowl; turn once to grease surface. Cover; let rise until double (about 1 hr.). Punch down. Cover; let rest 10 min. Grease a 1-quart casserole; sprinkle with cornmeal. Place dough in casserole; sprinkle top with cornmeal. Cover; let rise till double (30 to 45 min.). Bake at 400º for 40 to 45 min. Remove from dish; cool. Yield: 1 loaf. * This recipe can be doubled. Smells so good in here!!!
