The concept is very easy, take your chicken thighs and place in a foil lined baking dish, pour your favorite salsa over them, sprinkle with basil and then bake in the oven along with potatoes that have been washed and pierced a few times to prevent them exploding all over your oven and place them on the oven rack =(baked potatoes) for 1 hour in a 375 degree oven… when one hour is over place shredded sharp cheddar cheese on top of the chicken and place back in the oven for a few minutes until it melts! Serve with a side of salad… mine was green leaf lettuce, tomatoes, sliced almonds and some of that delicious sharp cheddar and some ranch dressing! Takes maybe 5 to 10 minutes to prepare and then go enjoy a good book, the news or internet while it bakes! Simple, inexpensive and yet elegant! The Chicken is moist and tasty! Baked potatoes can be decorated any way you like to burst with flavor in your mouth and the salad adds the greens, tomatoes and a slight crunch with the nuts and is refreshing! Enjoy!!! It looks great to me, but Mrs. Bucky doesn't like thighs. Would it work with chicken breasts?
