I decided to make something a bit different for dinner tonight as Red was working late and I didn’t feel like cooking the same ol’ stuff or working on something hard as I spent the afternoon snow-blowing the driveway! I had some thick pork chops on hand and some lasagna noodles so Lasagna here we go!!! Diced up the pork, fried it with fresh garlic and onion, basil, oregano and parsley to taste until cooked through, added a 16oz can of diced tomatoes, 16oz can of tomato sauce and a small tomato paste and brought to a simmer. Added some chopped red, green and yellow peppers and spinach and turned it off. In another bowl I mixed a container of Ricotta Cheese, 2 eggs and 1/4 cup Parmesan Cheese... during that time I boiled the noodles for 12 minutes then drained them. Put a bit of the meat/sauce mixture in the bottom of the casserole dish and then 4 noodles, some of the cheese mix and then more meat/sauce, 4 more noodles, some more cheese and the last 4 noodles top with cheese then meat/sauce and sprinkle lots of Parmesan Cheese over the top and cover with foil! Put in a 350 degree oven for 45 minutes, then remove the foil for 10 minutes more cooking time, take out of oven and let rest for 5 minutes and then serve! I put together a Cesar Salad and some Italian Breadsticks to go with ours! I think she will be surprised when she comes home! Smells good in here! Wow....never thought of using Pork in Lasagna...will have to try this.
